For godfather G...

On Friday night of godfather G's visit, he made fun of me and my cucumber salad because it ALMOST delayed dinner. but it didn't because the recipe is that easy and fast. and after tasting it, godfather G has to admit that it is quite yummy (especially in the heat) so now i am finally getting around to posting for him:

Cucumber-Scallion Salad
serves 8

1/2 cup white-wine vinegar
3 T sugar
1 T olive oil
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
2 cups (1 pt.) grape tomatoes
1 lb cucumbers
2 large bunches scallions (1 cup sliced)

mix dressing in a small jar with lid:
vinegar, sugar, oil, red pepper flakes, and salt. cover and shake well.

slice tomatoes in half.
peel, seed, and dice the cucumbers.
slice the white bottoms and enough of the tender green tops of the scallions to make 1 cup.
mix tomatoes, cucumbers, and scallions in a bowl and toss with dressing. serve chilled.

It was pretty yummy (shock 1) and quick (shock 2). The average time to table from raw ingredients takes hours typically for this Fresno family...not counting the times the dog actually ate most of the meat before it hit the grill (shock 3). So many good memories behind us...and in front of us to come! Woot! -- The Godfather (who's visited)

i'm back - but yes, the heat is getting to me. should be cooling down later this week but i'm taking the kids down to LA and meeting up with J. (flying into LAX from business trip).
